Can I copy the DLL(s) to the server and register them in the GAC? Then add
any needed entries to the machine.config file?

Here's what the MMIT setup does, roughly (and not necessarily in the
same order):

1) Copy the 2 DLLs to the framework directory.
2) GAC the DLLs.
3) Merge configuration information into machine.config.
4) Copy VS templates and files into various directories.
5) Register VS templates and files.
6) Copy documentation files.
7) Register documentation with help viewers.
8) Copy Quickstart files.
9) Create vdirs for Quickstart.
10) Create start menu items.

The first three steps can create a running installation of MMIT on a
machine. However, you won't have VS support, Quickstart, or
documentation. Also, you'd have to be sure to copy the machine.config
exactly from another, full, setup. This is also effectively the same
thing that happens if you install MMIT with only the runtime option
checked.

Note, however, that although you can technically do this, you can only
do so for your own purposes. The only redistribution of MMIT permitted
under the EULA is to distribute the entire package. Please consult the
EULA for more details on this.
